Holding 12-inch-by-20-inch pans, the number of pans the Market Forge ALTAIR II-4 electric steamer can accommodate varies by depth. It holds eight 1-inch pans, four 2.5-inch pans, two 4-inch pans, or one 6-inch pan. To increase steam velocity in the cavity, air moves with the convection fan, efficiently and evenly distributing steam. Operating like a heat sink, the cavity recovers heat quickly, retains heat, and has low energy consumption. A cast aluminum construction and anodized finish add durability and a non-stick surface that simplifies cleaning.

The three main cooking modes in this Market Forge ALTAIR II-4 electric steamer are soft poaching, traditional steaming, and high heat steaming. For customized cooking, it can be set at temperatures as high as 230 degrees Fahrenheit, and the heating indicator light illuminates when the elements are on. If there is a system issue, the clean probe indicator light alerts the operator, though this notification typically means that the water sensor probe needs to be cleaned.
