Description
Built for either warm or cold smoking and holding of meats and cheeses, this electric Slo Cook Hold & Smoker Oven has a double deck design with a 100 lb capacity for each deck. The unit is constructed of 20 gauge stainless steel. Each of the two compartments has two removable, non-magnetic stainless steel side racks with 11 rack positions and 2 stainless wire shelves, a stainless rib rack, a drip pan with a drain, and a wood chip container. Each compartment can hold 7 full size pans. Their doors have windows. The unit sits on 5 inch casters, two of them swivel with brakes, and two of them locking. Those are the nuts-and-bolts of the smoker.
It cooks, smokes and holds meat, fish and poultry, and also cold smokes fish and cheese. There’s a power switch, and a Cook Temperature Knob with a range of 200-325F and a Hold Temperature Knob with a range of 60-205F. A digital display keeps you aware of the temperature. There’s a 60 minute smoker timer, and up and down arrows allow you to control hold and cook times. There are indicator lights for the cook, hold and smoke functions. Sample bags of Apple, Cherry, Hickory and Maple wood chips are provided. There’s also a voltage conversion switch which permits you to choose either 208 or 240v. It’s designed with EcoSmart technology, so it uses electricity conservatively. Specifications
