Add more versitility in your baking process by combining the proofing and baking process with the Nu-Vu QB-39 Oven/Proofer Combo! Stainless steel construction on the interior and exterior is durable to withstand the demands of even the busiest commercial kitchen. The V-Air system provides even heating through cavity so that pans do not need to be rotated during the baking process. A microswitch turns the fan off to reduce heat loss and then recover heat quickly. The oven features two cavities: a proofer and a standard size oven. Operators can begin the rising process in the proofing cavity that holds up to 9 full size (18″ x 26″) sheet pans and then be moved to the standard oven that holds 3 full size sheet pans. Solid state controls give operators the ability to easily adjust temperatures in each compartment for heat and humidity. Tempered solid glass doors and interior lights allow product to be seen during the baking process – eliminating the need to open the door and disrupt the baking process or a great way for for the baking process to be displayed to customers.
